All wheat flour used in our cakes and pastries is spray free south island grown wheat. We make our own gluten free flour, a mix of rice, corn, tapioca, sorghum flours and xanthan gum (we cannot guarantee gluten free as wheat flour is used in our bakery therefore an amount could be present).
